Bretagne Regional Dishes Demo Lesson

In this training, Le Cordon Bleu Master Chefs will share with you the secrets of preparing the tastes of the "Bretagne Region", located on the north-west of France, along the Ocean's coast, famous for seafood.

In this training cooking the fish, making fish mousse, fish sauce preparation, fermentation, and caramelization methods will be taught. Our chefs will prepare these recipes:

  • Stuffed Sand Mussels,
  • Salmon Fillet Filled with Sorrel,
  • "Kounign-Amann" Caramelised Dough Pastry with Apple Coulis
